Cum se face whisky-ul [How is whisky made]
În afară de o prescurtată istorie a acestei băuturi, de pe un site cu atât de numeroase referiri la Scoţia precum este MunteanUK, parcă n-ar trebui să lipsească un răspuns la întrebarea: cum se face whisky-ul?
Deşi orzul ud a fost vânturat permanent, uscarea lui propriu-zisă urmează a se face într-un cuptor (kiln), cel mai adesea încălzit cu turbă (peat), ceea ce îi dă un iz specific – de pământ şi de fum.

Dacă butoaiele au ţinut anterior alte băuturi (sherry, vin), ele vor îmbogăţi aroma whisky-ului, din care 0.5-2% (angels’ share) se evaporă anual. Legea scoţiană prevede ca Scotch să nu fie numit whisky decât cel maturat minimum 3 ani.

Ocazie cu care, punând între paranteze cuvintele, fac încă o (foarte dragă mie :-) lecţie de lexic al limbii engleze. Poate că or fi de folos aceşti termeni, cândva, cine-ştie-cui…
Producerea nobilei licori, cu o mare însemnătate în istoria Scoţiei din ultimele veacuri, dar şi în economia scoţiană de astăzi, începe de la lanurile de orz – ingredientul principal.
Plantă uşor adaptabilă unui climat sucit (nu excesiv de friguros, dar adesea lipsit de razele soarelui), orzul (barley) este cultivat în imediata apropiere a distileriilor sau cumpărat de producătorii de whisky de la fermieri locali.
În afara culturilor de orz (poza 2) asemănătoare celor din East Lothian (3), un whisky de calitate mai are nevoie şi de o apă bună (4) de care aceste meleaguri nu duc lipsă.
Se preferă orzul de primăvară (cultivat în martie-aprilie şi recoltat în iulie-august), iar odată strâns de pe câmp, este adus în distilerii, precum cea de la Glenkinchie (5), situată în East Lothian, la vreo 25 km SE faţă de Edinburgh.
Într-o moară, malţul este măcinat până se face făină (grist), iar aceasta va fi amestecată cu apă fierbinte (la 63-68 grade Celsius), devenind un soi de terci (mash).
În această etapă, terciul din cazane (imaginile 7, 8) mi-a părut că miroase foarte îmbietor, ca o fiertură delicioasă, în care ai fi tentat să te înfigi imediat. Din amestecul fierbinte va rezulta un lichid plin de zaharuri (wort).
Pasul următor este punerea la fermentare, prin adăugarea drojdiei de bere (yeast) şi răcirea la 20-25 de grade Celsius a compoziţiei, care începe să duhnească (9, 10).
Fermentarea transformă zaharurile în alcool, care va fi captat prin distilare (11, 12, 13) sub formă de aburi condensaţi (low wine). Ce rămâne (pot ale) pe fundul cazanului de cupru este folosit ca furaj sau, în viitor, drept combustibil ecologic.
După o distilare dublă (sau triplă la Glenkinchie), whisky-ul (total incolor, dar care îşi capătă culoarea specifică ulterior) este gata de pus la învechit (maturation sau aging) în butoaie, de regulă de stejar, adesea aduse din SUA.
Dacă butoaiele au ţinut anterior alte băuturi (sherry, vin), ele vor îmbogăţi aroma whisky-ului, din care 0.5-2% (angels’ share) se evaporă anual. Legea scoţiană prevede ca Scotch să nu fie numit whisky decât cel maturat minimum 3 ani.

Lay monuments pointing at the sky [Monumente laice arătând către cer]
Isn’t is fascinating to witness that most (if not all) secular societies’ monuments are still pointing at the sky?
Even after scrapping the idea of divine authority over the earth and distancing themselves from the very concept of God (deemed as obsolete, backward, useless today etc) people are looking up to the visible skies and beyond.
Fewer and fewer are those drawn to Christ’s love, while more and more are those eager to welcome aliens descending from UFOs.
Nevertheless, all people (religious or self-worshipping irreligious), from all places and all ages, have always been secretly yearning for some kind of salvation from a world whose progress has only put and tightened a noose around our necks.
Cathedrals and churches are still towering cities in many countries of the Old Continent (most of which is part of the secular EU).

Some are abandoned ruins (see pics from Scotland here or here), others are turned into cafés or stores, however, they are still here with us, getting in the way of those who banished from God their minds and reject His natural laws.

People can’t live without a certain innate aspiration to verticality, can they? Hardly any monumental work of art could express greatness horizontally.

Followed either legitimately (“I am the Way, the Truth, the Life”) or illegitimately (through an anthropocentric Tower of Babel), this upward aspiration is inherent in human nature.

God’s place in a humanist society (24) [Locul lui Dumnezeu într-o societate umanistă]
For the Free Presbyterian Church of Scotland, closing down their website once a week is a sign of adherence to one of the dearest dogmas, the Holy Sabbath.
“This site is closed today in observance of the Lord’s day” – this is what their webpage says every Saturday. They clearly reject the Orthodox view of a renewed Creation, which established a new Holy Day (Sunday) of rest and worship.
This Free Presbytherian Sabbath is nothing but an idol. So is their Bible, and idols are also the gang of much appreciated Scottish reformers and their heritage:
“This priceless heritage is not ours without great cost. It was handed to us at the expense of much labour, sweat and blood.
To see the truth of this we do not need to go beyond our native land. Who has not heard of John Knox, George Wishart, Andrew Melville, and Alexander Henderson and a host of others too numerous to be mentioned?
Their life and their struggles on behalf of true religion [?!?!?!] is bound up with the history of Scotland in such a way that no one can read the history of our native land without realising the important part they played in handing us our religious heritage.”
I wonder what the epithete ‘free’ means, apart from signifying ‘liberation’ from the obnoxious Roman Catholic Church of the early 1500s?
Of Calvinist descent, iconoclastic, condemning the celebration of Christmas, this so-called church is ‘free’ from most of the ties that the Orthodox Church maintains to the Holy Apostles, and ultimately to its Founder, Our Lord Jesus Christ.
The birth of contemporary British humanism can be traced back to the birth of such self-proclaimed ‘free churches’. It all started with such twisted perceptions of God’s Revelation, and we can witness the results 500 years later, and almost a millennium after 1054/1066!
It’s no wonder that alternative families, abortions, euthanasia, genetic manipulation, and repression of Christianity, founded on a tragic denaturation of human nature, are made possible and cherished as humanist values of paramount importance in today’s Great Britain.

Din raidurile mele prin inima Scoţiei (26) [From my forays into Scotland's heartland]
Nu mi s-au părut prea grăbiţi scoţienii. Ba chiar, în Scottish Highlands pot fi domoli, ca peste tot în zonele mai înalte.
Deşi există şi la Edinburgh, Glasgow, Inverness (ori Aberdeen, unde n-am ajuns), precum în City of London, destui corporatişti pentru care timpul înseamnă (doar) bani…
Poate, tocmai pentru că destui scoţieni nu se omoară cu graba şi lasă pe poimâine ceea ce s-ar fi cuvenit să facă alaltăieri, au născocit acest proverb:
“Ceeea ce poate fi făcut oricând nu va fi făcut niciodată” – aşa facem fiecare dintre noi când ne uităm la ceas*** şi ne pare că avem timp.
Şi tot aşa aş zice că stau lucrurile şi cu independenţa Scoţiei, o posibilă, dar improbabilă nouă bătaie de cap pentru UE.

Clean like a hospital?! [Curat ca un spital?!]
Clean like a hospital?! It’s not the case in the UK, where hospitals can be very dirty, either in Manchester or Essex, in England or Scotland alike…
From what I heard, British hospitals can be at least as dirty as in Romania. Maybe not like the dirtiest, however, they may be like the regularly dirty Romanian ones.
Thus, the legend for these images should be “clean like a bus station” – in this particular example: St Andrew Square Bus Station, Edinburgh.

Chestii d-astea, numai la britanici (34) [Things like these, only at the Brits]
Că taxiurile britanice sunt mult mai viu colorate decât apar în filme – când, probabil, numai cine plăteşte bani grei poate apărea pe portierele automobilelor Manganese Bronze care apar pe marile şi micile ecrane – am mai scris deja (aici şi aici).
Dar o reclamă cu totul neobişnuită este cea din imaginea de faţă, făcută în Edinburgh. Oare mai există altundeva în lume astfel de invitaţii pentru a urma studii universitare (în speţă la Aberdeen, în nord-estul Scoţiei)?!
Ce efect o fi avut campania aceasta?! Câţi tineri or fi socotit că această bătrână (datând din 1494) University of Aberdeen trebuie să fie una ‘cool’, din moment ce îi întreabă “Ce mai aştepţi? …un autobuz?” şi îşi face reclamă în acest mod inedit?

[EN] It’s not the first delicious ‘British stuff’ that I recommend, but this one really makes it to my top of ‘3-5 best of the best’! [RO] Nu este prima ‘chestie britanică’ delicioasă pe care o recomand, dar aceasta chiar intră în topul meu ‘3-5 cele mai bune’!
[EN] Cranachan – an amazing, mouthwatering, traditional Scottish dessert. [RO] Cranachan – un desert tradiţional scoţian uimitor, care îţi lasă gura apă.

Din raidurile mele prin inima Scoţiei (25) [From my forays into Scotland's heartland]
Două ciudăţenii din Scoţia. Prima – două jumătăţi de vacă înfipte într-o clădire de pe aşa-numita ‘stradă a vacilor’ (Cow Gate) din Edinburgh.
A doua – o cabină de camion de pe Sauchiehall street, la intrarea într-un club situat într-o zonă de shopping, baruri şi restaurante din Glasgow.
Să se fi născut în Scoţia (sau altundeva pe tărâm britanic) acest tip de artă urbană, pentru a colora puţin clădirile înnegrite de umiditate?
Ori este doar o modă importată din SUA, unde aceste exprimări artistice (kitsch în toată regula, ar zice unii) sunt menite să ia ochii consumatorilor?

Alcoolul ăsta, prietenul cel mai bun al britanicului? (19) [This alcohol, a Brit's best friend?]
Născocită în Mesopotamia, distilarea băuturilor a pătruns în actuala Marea Britanie pe la sfârşitul primului mileniu creştin. Este doar o supoziţie, nimeni nu poate şti exact.
Se cunoaşte doar că acest meşteşug a venit dinspre Irlanda – de unde a venit şi creştinismul, cumva a doua oară şi cu o vigoare mai mare decât când Britania era provincie romană.
Cum obiceiurile rele au mai mare vitalitate de propagare decât virtuţiile, prepararea acestor băuturi tari s-a extins în întreaga Scoţie, apoi (poate chiar concomintent!) în Anglia.
Nici când, nici cum s-a născut băutura spirtuasă atât de cunoscută – whisky (în engleza scoţiană), respectiv whiskey în engleza irlandeză şi americană – nu se ştie exact.
Totuşi, probabil că trecuseră sute de ani de când începuse să fie fermentată, distilată şi băută până la prima atestare documentară (Irlanda, 1405).
S-ar putea scrie tratate întregi despre cauzele pentru care s-a inventat whisky-ul şi motivele care au dus la râspândirea sa. Remarc câteva – două mai evidente, altul mai bizar.
În primul rând, lipsa vinului. Clima insulelor britanice nu prea favoriza creşterea viţei de vie, iar nici comerţul de masă cu o astfel de delicatesă timp îndelungat.
Secole întregi, vinul nu se afla decât în biserici şi pe mesele nobililor lorzi, dar nicidecum nu era atât de accesibil precum în societatea de consum de azi.
Un alt motiv al răspândirii meşteşugului a fost desfiinţarea monahismului în Anglia, în timpul Reformei lui Henric al VIII-lea.
Daţi afară din mănăstiri, călugării au răspândit în lume tehnologia de preparare a acestei licori obţinute din fementarea cerealelor, asupra căreia avuseseră monopolul.
Să ne mirăm că Reforma şi Protestantismul au prins atât de repede pe meleaguri britanice, dacă monahii aveau astfel de preocupări neduhovniceşti?!
În fine, cred că cel mai important motiv de răspândire a whisky-ului a fost inventarea alambicului (1826).
Greu de zis dacă de la whisky se trag cele 4% din cazurile de cancer cauzat de alcool în UK, dar alcoolul pare încă o afacere de succes în Scoţia, deşi contestată de unii.
Profitabilă, dar pe cale să devină o victimă a independenţei Scoţiei, căci avertismenul de la Londra este limpede – prin FCO nu s-ar mai promova pe gratis băutura!
Oare or mai rămâne la fel de productivi lucrătorii scoţieni care scot produse (sticle de 750-1,000 ml) cu o valoare medie de £ 20-160?
